Perfect for when you don't have much in the cupboard but feel like whipping up a sweet treat!
Remember no white flour or sugar in base so let it set in freezer before attempting to cut - then keep in the fridge.
Ingredients
Base
- 1 cup rolled oats
- 1 cup shredded coconut
- 1/2 a cup of psyllium
- 200 g melted butter
Topping
- 1/2 a tin of condensed milk
- 1 tbsp butter
- 2 tbsp golden syrup
Method
- Press most of the base ingredients into a lined tin (save approx. 2 tbsp)
- Bake for 15 minutes on 180 degrees celsius, then remove from oven
- Combine topping ingredients in a saucepan and melt until thick
- Spread over base
- Add 1 cup raspberries (I love macro organics frozen raspberries - thaw first)
- Sprinkle last little bit of base mixture on top
- Place back in oven for 12 minutes on 180 degrees celsius
- Once cooked, remove and cool, then place in freezer to properly set
- Cut and keep in fridge
Blueberries would work in place of raspberries too!
