A sensational creation - cajun mince topped with kumara, parsnip and carrot mash. Got a huge thumbs up from my man, and it was the perfect nourishing meal on a cold night!
Ingredients
Base
- 500g beef mince
- 1 onion diced
- Frozen spinach rounds (I used 10)
- 1 tsp. Oregano
- 1 tsp. Thyme
- 2 tsp. Cajun
- Lots of black pepper
- 2 cups bone broth (either chicken or beef is fine)
- 1 tin cherry tomatoes
- Olive oil to saute
Mash
- 1 large orange kumara, peeled
- 2 parsnips, peeled
- 2 carrots, peeled
- A big knob of butter
- Black pepper
Method
Base
- In a large pot, saute onion
- Add cajun, thyme, oregano and pepper
- Add mince, spinach and broth, and cook until rich and reduced
- Add in the cherry tomatoes
- Place mix into an over proof dish
Mash
- Boil veggies until tender, drain, add butter and pepper and mash
- Top base with mash, then some grated cheese and pumpkin seeds.
- Place in a hot oven to melt and brown the cheese.
Serve with steamed greens or a rocket salad, and enjoy!
