Turmeric spice muesli
2 cups each of pumpkin and sunflower seeds
1 cup each of sliced almonds and walnut halves
1 cup of shredded coconut
1 cup of puffed millet or puffed spelt (optional)
1 250g bag of dried apricots
¾ c of macadamia nut oil (this has a delicate flavour)
1 tsp. cinnamon
1 tsp. turmeric
1 tsp. vanilla bean paste
1 knob of freshly grated ginger
A pinch of pink salt
2 good grinds of black pepper (enhances absorption or turmeric)
1 knob of fresh turmeric grated (optional)
Mix the spices and salt with the oil
Place dry ingredients except apricots in an oven dish and coat with oil mix, bake on 180 degrees C for about 10 minutes checking and tossing muesli a couple of times to brown it. Remove from oven and add apricots. Store in an airtight container.
Note: you can use any type of nuts or dried fruit these are just my favourites
