Pistachio, blueberry, bacon and haloumi salad
3 cups of Salad leaves I love baby spinach and rocket
Add ½ a sliced red onion
1 cup of Blueberries or sliced plums or pear when not blueberry season
¾ of a cup of shelled Pistachios
6 rashers of bacon, fried than diced
8 – 10 pieces of Haloumi fried in the bacon fat until golden
Place the leaves, onion, blueberries and pistachios in a large salad bowl and dress with good quality olive oil and balsamic vinegar and season with lots of freshly ground black pepper then add the bacon and haloumi.
Delicious, simple, quick, nourishing.
