Anytime crumble

This is one of my all time favourite recipes, it's nourishing comfort food without the sluggish weighed down feeling.  This is one of the recipes I encourage in my Goddess Code where I teach you how to live in harmony with your cycle, how to eat for each season of your cycle and how to move your body through each season.  This freezes really well and perfect anytime of the day or night!

 

Breakfast crumble/anytime crumble

About 4 cups of fruit whatever you have can be tinned if that is all you have. If it’s really firm fruit like apples or firm pears you will need to cook them in a pot for a little while to soften but don’t overcook it’s much better if the fruit still has a bite to it.

Crumble topping

2 C of raw unsalted nuts I love walnut halves and sliced almonds

1 cup of shredded coconut

1 cup of rolled oats

200g Butter or coconut oil melted

1 tsp. cinnamon

1 cap of pure vanilla extract

  • Note: you can add 2 tsp. of real maple syrup if you like and are new to foods that are not overly sweet

 

Other flavours include

Plum

Pear, ginger and lime, adding 2 tsp. of ginger and some lime zest to the crumble topping

Apricot and nectarine, adding sliced almonds to the crumble topping

Apple and raspberry leave out cinnamon and add the zest of 1 lemon

Fejioa, ginger and lime (as with pear)

Rhubarb, apple, cinnamon and walnut

Combine crumble ingredients in a bowl and top the fruit mixture, bake at 180 degrees C until golden (about 15 – 20 minutes), serve with runny cream or Greek yoghurt or vanilla ice-cream
